New dish of the week…

This week my new dish this week was a combination of what was left in my fridge midweek: Aubergine, onion, and half a jar of tomato passata. Surprisingly it was actually really tasty, I loved the aubergine in the sauce.

You will need:

  • 1 aubergine
  • half a red onion
  • 250ml red passata
  •  pasta

What to do…

Heat some oil in a pan with a clove of garlic. Dice the onion and aubergine.

Fry the aubergine with the onion until it is cooked through, then add the passata, a small drop of water and 2 tablespoons of sugar to take away the bitterness. IMAG1226 IMAG1227

In a separate pot boil the pasta for 8 mins. Add to the pan and stir through.IMAG1228 IMAG1229Remove the garlic and serve! it really is as simple as that.
