Oodles of Zoodles on Day 10.
Keeping it simple on day ten with some vegan pasta and zoodles. To start with I made my sauce by blending up 1 buffalo tomato, some red onion and for sweetness, 2 carrots. I slowly heated this on low heat in a pan. Then I added some basil and continued to heat and stir until the sauce thickened to a consistency that I liked. Into this I added some pasta and about 2 cups of zoodles. I mixed these through and that’s it. Ready to eat!
