Day 12 Vegan Blueberry Banana Muffin Recipe
What you will need:
Half a punnet of blueberries, muffin cases, agave nectar, 2 ripe spotty bananas, gluten free oats, soya milk, baking powder and vanilla essence.
First, pre-heat an oven to 180’C. Prepare a baking tray/ bun tray by leaving out your muffin cases. Then prepare you wet ingredients by blending up the bananas, with 1 cup soya milk and 2-3 tablespoons agave nectar.
Then add this to 2 cups of oats with 1-2 teaspoons of baking powder. Mix well before adding in the blueberries. Gently stir the blueberries through the mixture.
Spoon the mixture into your muffin cases and bake for 20-25 minutes until golden on top.
