Blogmas Day16: Mini Celebration Cheesecakes

day 16IMG_7826aAs I mentioned in a previous post it was recently my boyfriends birthday; he doesn’t have a big sweet tooth, but if there is one sweet thing he loves it’s a berry cheesecake. Last year I made a full sized strawberry cheesecake that we could barely finish between the two of us, so this year I wanted to do mini sized cheesecakes and also decided to try baking them as well. These cheesecakes are the perfect size if you’re having a party, or if you have a boyfriend who likes little desserts, and they were really easy to make.IMG_7829a

You will need:

  • A muffin tin
  • 250g cream cheese
  • 110g caster sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 2 eggs
  • 125g digestive biscuits
  • 25g butter
  • fresh/frozen berries

  1. Start by melting the butter in a saucepan. Crush the biscuits and add to the butter. Spoon this mixture into the muffin tin, using the back of a spoon (or a second muffin tin) to press the crumb firmly into the tin. Allow this to cool and place in the fridge for 1-2 hour to fully set.
  2. In a large bowl whisk together the cheese, sugar, lemon juice and vanilla extract. You may wish to add a small amount of blended berries (about 2-3 tbsp) to give the mixture colour. Beat the eggs into the mixture, one at a time.
  3. Spoon the mixture onto the biscuit bases in the muffin tin. Place in a preheated oven at 180’C for about 20mins or until they have slightly risen and begun to crack on top.
  4. Allow the cheesecakes to to fully cool in the muffin tin before using a pallet knife to remove them. Add some finishing touches by decorating with loose berries. For an added extra, blend together 1 cup of mixed berries, 1 tbsp lemon juice and 2 tbsp of icing sugar, them drizzle this over the cheesecakes.IMG_7848aIMG_7854aIMG_7860a
