Blogmas Day 22: Vegan Fruit Cake

day22IMG_7976Last week I posted a recipe for a boiled fruit Christmas cake, a cake that my mother always makes around Christmas. However, not everyone can enjoy all baked goods at Christmas so I wanted to make a Vegan, gluten free and refined sugar free version of the cake so that everyone can have a slice of Christmas. While nothing can ever beat mama’s original, this comes pretty close in taste and texture and is a super tasty, guilt free Christmas treat!IMG_7989You Will Need:

  • 5 large ripe bananas
  • 1 cup almonds
  • 2 cups pecans
  • 1 cup gluten-free flour
  • 3 teaspoons chia seeds
  • 1/2 cup agave nectar
  • 1 tablespoon mixed spice
  • 1 tablespoon cinnamon
  • 1 cup sultanas
  • 1 teaspoon bread soda

  1. Grind up the almonds and pecans in a food processor or powerful blender into a fine flour. Add to a bowl with the flour, chia seeds, bread soda and spices.
  2. Blend up the bananas and add to the mixture with the agave nectar. Mix well and then add in the sultanas.
  3. Pour out evenly between two loaf tins (you may wish to grease these with coconut oil first), and bake in a preheated oven at 150’C for an hour.
  4. Remove from the oven and allow to cool slightly in tin before turn out onto a wire rack to cool fully.
