Blogmas Day 22: Vegan Fruit Cake
Last week I posted a recipe for a boiled fruit Christmas cake, a cake that my mother always makes around Christmas. However, not everyone can enjoy all baked goods at Christmas so I wanted to make a Vegan, gluten free and refined sugar free version of the cake so that everyone can have a slice of Christmas. While nothing can ever beat mama’s original, this comes pretty close in taste and texture and is a super tasty, guilt free Christmas treat!You Will Need:
- 5 large ripe bananas
- 1 cup almonds
- 2 cups pecans
- 1 cup gluten-free flour
- 3 teaspoons chia seeds
- 1/2 cup agave nectar
- 1 tablespoon mixed spice
- 1 tablespoon cinnamon
- 1 cup sultanas
- 1 teaspoon bread soda
- Grind up the almonds and pecans in a food processor or powerful blender into a fine flour. Add to a bowl with the flour, chia seeds, bread soda and spices.
- Blend up the bananas and add to the mixture with the agave nectar. Mix well and then add in the sultanas.
- Pour out evenly between two loaf tins (you may wish to grease these with coconut oil first), and bake in a preheated oven at 150’C for an hour.
- Remove from the oven and allow to cool slightly in tin before turn out onto a wire rack to cool fully.
