Mixed Vegetable Soup Recipe


I been feeling really unwell for the last week, and there’s nothing more comforting when you’re sick then a good mixed vegetable soup. I added a little extra spice to this one to help sweat out fever and open the sinuses; if you’re feeling under the weather this soup will be sure help you on the path to recovery.



  1. Boil the potatoes for 20-25 minutes.
  2. Meanwhile cut the carrots into rings and add to a pan with some olive oil, the garlic and chilli flakes. Once the carrots have started to soften, shred the onion and dice the pepper and add both to the pan; stir fry until the vegetables are cooked but not mushy. Take out the garlic cloves.
  3. Add the vegetables, potatoes, cumin, turmeric, coriander and about 500ml of the water that the potatoes  were boiled in to a blender and blend into a smooth soup. Return to a pot and heat to the desired temperature. Serve with some mixed seed.
