Vegan Pear Tarte Tatin

Another vegan dessert for you this Sunday, and this one is extra special and taste just as good as it looks. It’s vegan, gluten free, dairy free with no refined sugars; it’s a beautiful pear tarte tatin. This dessert is made for sharing, so is perfect if you are entertaining or looking for something simple to make and bring to a lunch or dinner this Summer.

To start with I quartered and cored about five pears and started to cook them in a pan on a low heat, turning to stop them burning. I cooked them just enough to soften the pears but still leaving them firm enough to move from the pan to my cake tin. I laid the the pears around the edges of a loose base tin or a spring form tin. Next I made the caramel by heating 3-4 tbsp coconut sugar with a drop of water a tbsp of agave sugar and a drop of vanilla essence, I stirred until the ingredients melted together, forming a golden caramel which I then poured over my pears.

The last step was the crust; for this I ground up 1 1/2 cups gluten free oats into a flour and combined in a bowl with 2 tbsp coconut sugar and 1 tsp cinnamon. Then I added 2-3 tbsp agave sugar and rubbed in with my fingers to make like breadcrumb. I poured the crumb over the pear and caramel and spread out evenly pressing it firmly into places with my fingers. I baked this in a pre-heated oven at 200’C for 30mins until golden brown on top.

When the tarte was done baking I left it cool for about an hour to allow the caramel to set before turning it out on a plate. This would be great served warm with some soy cream or yoghurt or a bit of banana-date nice-cream.
